A mostly Cabernet wine from exceptional batches of fruit grown to the estate's own Barossa vineyards. Open fermented on skins at a controlled temperature of 18C and 25C for eight days. After traditional pressing, transferred to French and American hogsheads to finish fermentation in the barrel, a culture is added early to induce a secondary ferment as quickly as possible. The wine is racked with minimal sulphur, critical for natural flavour development, colour stability, and to strike the perfect balance of Cabernet and Merlot expressions. Maturation in oak barrels for fifteen months, final assemblage is followed by a light filtration prior to bottling. Approx 14.5% Winemakers Geoff and Robert Schrapel
Deep, rich red in colour. Aromas of lifted red berry fruit and spice. Supple bouquets of plum and cassis, cranberries and currant, prune and armagnac. Leafynesss and herbs precede a forward palate smacking of prune and figs, currants, warmly framed by soft velvetine tannins. Deeply flavoursome, gentle with overtones of light milky oak. A well balanced finish, restrained acid, lingering fruit. Enjoy this comforting wine with a casserole of lamb and potato, or just about anything that incorporates gruyere cheese.
